Ingredients

Serves : 8
  • 1.5 cup maida (250gms)


  • 1/2 cup caramel Syrup


  • 3tbsp curd


  • 1/2 cup fine Sugar


  • 1.5 tsp Spice Powder ( Mix of Cardamom, Nutmeg,Cloves & Cinnamon)


  • 50 gms Melted Amul Butter


  • 1/2 cup chopped Dry Fruits (Walnut, Cashews & Almond)


  • 1/2 cup Rum Soaked Chopped dryfruits( Dates,Figs,Tutti Fruity,Glaged Cherries, Black & brown raisins


  • 1/4th Cup Orange Juice


  • 1 tsp lemon & Orange Zest

Directions

  • Grease baking pot with Butter & Keep aside
  • Preheat Oven@180°C for 10 minutes
  • Take melted butter,add Sugar ,Curd & mix well
  • Now add baking Soda & Baking powder & keep it aside for 5 minutes
  • Take a big bowl, strain maida & spices in that, add dry fruits & soaked dry fruits into this & gently mix in maida
  • Now add butter sugar mix, add caramel Syrup & orange juice & mix well
  • Mix liquid ingredients into dry ingredients.
  • Gently fold with spetula & make sure there is no lumps.
  • If needed you can add little milk to adjust cake batter consistency
  • Add lemon & Orange zest & transfer cake better into cake pot
  • Put cake into oven @170°c for 45-60 minutes bake.
  • I have Soaked my dry fruits in Rum almost a month before.
  • You can Soak dry fruits in Orange Juice for almost 2 days, if want non boozy cake
  • Once cake is done then brush it with Rum & let it cool for 3 to 4 hours
