Ingredients

Serves : 4
  • 250g Black-eyed Beans


  • 3 medium to large carrots


  • 1.5 medium onions


  • 50g tomato paste


  • 1 tablespoon parsley


  • 1 tablespoon sweet basil


  • 1.5 teaspoons vegetable stock


  • 1 tablespoon dried chilli


  • 0.5 cups of lentils


  • 0.25 cups of fresh mint


  • 1 cup of spinach

Directions

  • Bring black beans to a boil and simmer for 1 hour
  • Add vegetable stock
  • Steam/cook corn/mielie
  • After simmering for 30 minutes, add lemtils and finely chopped carrots and onions. Add dried chilli
  • Add the rest the last 5 minutes of simmering
  • Mix throughout and add water if necessary
  • Add corn/mielies
