Ingredients

Serves 5

  • for sponge cake: 200 gms butter, softened, plus a little extra for greasing

  • 500 gms plain flour

  • 150 gms caster sugar

  • 4 eggs

  • 1 tsp baking powder

  • 1 tbsp oil

  • 1 tsp vanilla essence

  • 40 ml milk

  • 2-3 drops edible food colouring - red, orange, yellow, green, blue , purple, pink

  • For the icing 1 tsp vanilla essence

  • 300g cream cheese

  • 350g icing sugar

  • 2-3 tsp cold milk

    Preheat oven to 200degrees F (175 degrees C). Grease and flour a 9 inch round pan. combine flour & baking pwdr in a bowl. cream butter and sugar until combined, add eggs one at a time followed by a little of the flour and mix well before adding remaining flour and vanilla extract.

    If your mix is a little thick add up to 40ml milk - adding a tablespoon at a time and stopping when you get to a consistency that you're happy with.

    Divide batter evenly among 7 small bowls equally. add the 7 colors to each bowl. mix well.

    pour batter from 1 bowl in greased cake tin & bake for 10-12 mints or until done.chk with a skewer. if it comes out clean ur cake is done. remove the cake on a wire rack & cool completely. repeat the procedure with all other 6 layers.

    for the icing : combine cream cheese,icing sugar, vanilla essence & milk in a bowl & beat with a electric beater for few mints until soft peaks r formed. chill icing for atleast 15 mints.

    now place a layer of cake on a cakestand or serving plate. spread out the icing evenly & cover with another layer of cake.

    repeat the process until all layers of cake r used.

    complete the cake by spreading the icingevenly all over the cake.

    decorate with sprinkles

    slice & serve
