  • All purpose flour 1 and 1/2 cup

  • Carrot puree 1 cup

  • Melted butter 3/4 th cup

  • Milk 1-2 tablespoons

  • Sprig Vanilla Extract 1/2 teaspoon

  • Eggs 2

  • Powder sugar 3/4 th cup

  • Baking powder 1 teaspoon

  • Baking soda 1/2 teaspoon

  • Finely chopped almonds 1 to 2 tablespoons


  • First of all sift , APF, powder sugar , baking powder and baking soda, 2-3 times and keep aside
  • In a mixing bowl take eggs and with the help of a hand blender beat well till fluffy and light
  • Now add melted butter, Sprig vanilla extract , some milk to it and beat well till fluffy
  • Now add carrot puree to it and lightly fold it
  • Now take sifted flour and gradually add in to wet mixture in small amounts
  • Add half of chopped almonds too and prepare a lump free uniform cake batter
  • By the time preheat oven on 180 degrees
  • Grease cup cake moulds with some butter or oil and pour ready cake batter into it up to 3/4th level and top it with finely chopped almonds
  • Bake carrot cup cakes on 180-200 degrees for 15-20 minutes
  • Let them cool completely , Garnish as per need and enjoy health with taste
