Ingredients

Serves : 12
  • 1 cup oats 1 tsp coffee


  • 3/4 cup whole wheat flour


  • 3/4 cup maida


  • 3/4 cup brown sugar


  • 2 tsp baking powder


  • 1/2 teaspoon salt


  • 2 large eggs


  • 3/4 cup milk


  • 1/4 cup vegetable oil


  • 1 tsp vanilla extract


  • For icing


  • 200gm chocolate (dark n white chocolate in 4:1 ratio)


  • 1 cup cream


  • 1 tsp butter


  • For Strawberry frosting


  • 1 cup cream cheese


  • 1/2 cup butter


  • 1/8 cup freeze-dried strawberry – ground into a powder 3 tbsp strawberry syrup

Directions

  • Preheat oven.
  • In a large bowl mix together all the dry ingredients.
  • In a medium size bowl whisk together the eggs, oil, milk, and vanilla, stir the wet ingredients into the dry ingredients until just moistened.
  • Spoon mixture into lightly greased muffin cups (or use liners) to about 3/4 full. 
  • Place muffins on lower middle rack of oven and bake for 15 – 17 minutes or until a tooth pick inserted comes out clean.
  • Take out the cups from oven n let them cool completly
  • For chocolate icing melt the chocaltes n mix all ingredientes. Beat them till all the ingredientes mix together properly.
  • Similarly for strawberry frosting
  • Cream the cream cheese and butter together with an electric mixer on medium speed until fluffy.
  • Add strawberry syrup and powder freeze-dried strawberry and mix to combine.
  • Transfer both frosting to 2 pastry bags fitted with the star/any other tip , top cupcakes with frosting.
  • Delicious n creamy cup cakes are ready to relish. Its a must try recipe on Christmas.
