1 cup oats 1 tsp coffee
3/4 cup whole wheat flour
3/4 cup maida
3/4 cup brown sugar
2 tsp baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup milk
1/4 cup vegetable oil
1 tsp vanilla extract
200gm chocolate (dark n white chocolate in 4:1 ratio)
1 cup cream
1 tsp butter
For Strawberry frosting
1 cup cream cheese
1/2 cup butter
1/8 cup freeze-dried strawberry – ground into a powder 3 tbsp strawberry syrup
In a large bowl mix together all the dry ingredients.
In a medium size bowl whisk together the eggs, oil, milk, and vanilla, stir the wet ingredients into the dry ingredients until just moistened.
Spoon mixture into lightly greased muffin cups (or use liners) to about 3/4 full.
Place muffins on lower middle rack of oven and bake for 15 – 17 minutes or until a tooth pick inserted comes out clean.
Take out the cups from oven n let them cool completly
For chocolate icing melt the chocaltes n mix all ingredientes. Beat them till all the ingredientes mix together properly.
Similarly for strawberry frosting
Cream the cream cheese and butter together with an electric mixer on medium speed until fluffy.
Add strawberry syrup and powder freeze-dried strawberry and mix to combine.
Transfer both frosting to 2 pastry bags fitted with the star/any other tip , top cupcakes with frosting.
