1/2 cup baby spinach
Deseeded tomato cubes 2 tablespoons
Cottage cheese cubes 1 tablespoon
1 tablespoon sliced onion
Salt and pepper according to taste
Cheese slice 1
Butter for greasing
Milk 1/4 cup
First whisk eggs with milk and spices in a bowl till mixture becomes light and fluffy.
Now grease a non-stick pan with butter generously. Heat it on low flame.
Now pour ready egg mixture in pan.
Garnish egg mixture with all rest mentioned ingredients immediately.
Lid the pan and let frittata cook on low flame.
Soon sides of the mixture thicken and will start leaving the pan.
After 10 minutes , check frittata with knife, whether it's cooked or not.
If knife comes out clean then frittata is ready otherwise let it cook for 2 minutes more.
Spinach, cottage cheese and eggs are high in proteins. So protein rich frittata is ready to relish. Its very soft and spongy.
This can be good option for any potluck party or get together.
