First boil water and add salt. Cook pasta untill soft or 75-80% cooked. Do not over cook them or cook completely.
Drain the water completely. Spread them on a plate and allow them to dry completely.
Meanwhile in a bowl add all masalas(including citric acid if using) and mix well.
Once pasta is dry, Heat oil in a pan or kadai on high flame. Fry pasta ij batches until golden brown and crispy.
Transfer on a paper towel to drain excess oil. Immediately sprinkle prepared masala and oregano. toss well.
Store it in a air tight container and serve with masala chai or have it for some evening snacks.
