Egg Bhurji


Egg Bhurji is a popular Indian food and eats for breakfast or lunch or dinner. Another version of scrambled egg with some veggies like tomatoes, onions, coriander leaves, chilies and seasoned with some hot spices. It is Mumbai’s famous and fast selling food available at all food stalls prepared using Pav bhaji skillet. It is commonly called Anda Bhurji Pav or Bhurji Pav.

Serves : 4
  • 3 nos eggs

  • 1/2 tsp cumin seeds

  • 1 nos onion large finely chopped

  • 3 nos tomato finely chopped

  • 3 tbsp finely chopped coriander leaves

  • 2-3 nos green chilies hot slit

  • 1/2 tbsp fresh ginger paste

  • 1 tsp turmeric powder

  • 1 tsp garam masala

  • 1 1/2 tsp red chili powder

  • 1/4 tsp salt to taste

  • 1 1/2 tsp oil


  • In a wok or nonstick pan heat oil. Add cumin seeds. Let them splutter and sizzle.
  • Add finely chopped onion. Cook till translucent.
  • Add Grated ginger and green chilies. Cook till raw aroma goes away.
  • Add red chili powder, turmeric, garam masala, and salt. Stir for few seconds.
  • Add finely chopped tomatoes. Cook them on low flame till tomato softens and become mushy.
  • Add finely chopped coriander leaves. Mix well.
  • Add slightly beaten eggs and keep stirring the mixture until small soft crumbs are formed. This will take 4-5 minutes.
  • Check the texture of crumbs, if you want your egg to cook more, cook it for more 2 minutes.
  • Switch off the flame. Garnish it with finely chopped coriander leaves.
  • Serve hot with brown bread or Pav or Roti, Naan.
