Ingredients

Serves : 10
  • 1 cups couscous


  • 1 1/2 cups hot water


  • 1 nos onion chopped


  • 2 nos green chillies chopped


  • 1 tbsp chopped mint or parsley


  • 1/2 tsp salt


  • 100 gms cheddar cheese sticks


  • 2 cups vegetable oil to deep fry


  • 1 tsp crushed cumin

Directions

  • Take couscous in a bowl.
  • Soak with 1&1/2 cup of hot water for 10 minutes.
  • In the meantime chop onion and green chillis and green herbs.
  • After 10 minutes couscous will absorb all water and they will puff.
  • Take a food processor or mincer, add the soaked couscous and all other ingredients except oil.
  • Mince to make a coarse paste.
  • Transfer to a bowl.Place a kadai or pan to stove top to heat sufficient oil .
  • Take cheddar cheese ( you can also use mozzarella), and cut into small strips like the picture.
  • Take small portion from the couscous mixture, make oblong shape patty with a cavity.
  • If you feel that the mixture is too soft to handle, add little breadcrumbs while making the patties.
  • Fill 1 cheese stick to fhe cavity.
  • Seal the cavity to make an oblong shape chop.
  • Make all the kibbeh like this.
  • Deep fry them on both sides in medium heat oil for about 5 minutes.
  • Serve hot with any kind of chutney or ketchup
