cut the potatoes in long shape ( like French fries) wash it and keep a side
in a grinder pot add fennel seeds, heeng, dry red chili, & kalunji and make a fine powder this is known as achari masala
now heat oil in a pot add cumin seeds when its crackle add ginger garlic paste and saute for 2 minutes
now add potatoes and stir fry for 5 minutes
now add turmeric powder red chilli powder, chat masala and achari masala mix well
now add salt and one cup of water mix it well and cooked till potatoes become soft and tender
when its become soft saute well till oil comes now garnish with some coriander leaves and serve
