Quick Breakfast Platter With Egg Souffle & Steam Veg

Ingredients

Serves 1

  • Egg 1 nos

  • Milk 2 tbsp

  • chopped mixed veggies like capsicum, tomato, onion and green chilli 2 tbsp

  • chilli flakes 1/4 tsp

  • grated cheese 1 tbsp

  • small potato 1 nos

  • mixed green peas, sweet corn and carrot 1/2 cups

  • chat masala to sprinkle 1/2 tsp

  • olive oil 1/2 tsp

  • salt to taste 1/3 tsp

  • lettuce leaves to garnish (optional) 2 nos

    Beat egg with little salt and chilli flakes.

    Add milk, chopped tomato, onion, capsicum and green chilli.

    Transfer the mixture to 2 small ramekin bowls or any other microwave safe bowls.

    Sprinkle some grated cheese on the top.

    Microwave in high heat for about 2 minutes.

    Souffle is done.

    Clean and prick the potato with a fork.

    Microwave the potato for about 4 minutes to cook.

    Now peel and cut boiled potato in cubes.

    Blanch the peas, sweet corn and carrot in boiling water for a minute.

    Drain and transfer to a plate. Sprinkle chat masala and salt.

    Heat a nonstick pan with little olive oil.

    Saute the potato cubes just to become light golden brown.

    Remove and sprinkle some chat masala and salt.

    Take a serving dish, place egg shuffle over some letuce leaves.

    Add the prepared vegetables in the plate.

    Healthy, nice looking and delicious quick breakfast is ready.
