Heat oil in a heavy bottom kadai on high flame for a minute. Reduce flame on medium.
Add sliced onion , a pinch of salt and fry till brown colour. Take out from kadai and keep aside. Now add all chopped veggies like cauliflower, carrot, french beans and stir fry for one minute on high heat. Take out and keep it in another bowl.
Put water in the same kadai and boil on high heat. First add garlic, ginger,Maggi masala powder and stir well. Cook it for 30 seconds on medium heat. Break noodles as per your preference and drop in water slowly. Stir once.
After one minute of cooking noodles add fried vegetables , cover it with lid and cook for another 2 minutes on low flame.
Now remove the lid. Sprinkle Chinese seasoning, mint leaves and stir once. Switch off the gas stove.
