Couscous 1 cups
Carrot cut into small cubes 1 nos
green or red Capsicum cut into cubes 1 nos
green Beans cut into bite-size 1/2 cups
green peas 3 tbsp
sweet corns 2 tbsp
boiled Chick peas (optional) 2 tbsp
green Chili chopped 1 nos
Onion chopped 1 nos
cloves Garlic chopped 2 nos
Coriander powder 1/2 tsp
cumin powder 1/3 tsp
Black Pepper crushed 1/4 tsp
Olive oil 1 tbsp
Salt or as required 1 tsp
Vegetable stock. 1 1/2 cups
Place a steamer over stove top with salt water.
Steam together carrot cubes, bean pieces, green peas and sweet corn for 5 minutes.
Heat 1 tablespoon of olive oil in a pan.
Add chopped onion and saute till onion becomes soft.
Add chopped garlic and chilli and saute for a minute.
Add capsicum cubes and fry for 2-3 minutes.
Now add the steamed vegetables and boiled chick peas.
Add salt, coriander powder, cumin powder and pepper crush. Mix well.
Add 1 cup of couscous and give it a mix.
Add 1&1/2 cup of vegetable stock(I used the stock left in the steamer).
Don't stir anymore after adding stock.
Cook for 1 minute and switch off the flame.
Rest it untouched for 5-6 minutes to soak the stock completely by couscous.
When entire stock soaks, take a fork and gently fluff the couscous.
Transfer to serving bowl, garnish with some green leaves and serve warm.
