Ingredients

Serves 4

  • Couscous 1 cups

  • Carrot cut into small cubes 1 nos

  • green or red Capsicum cut into cubes 1 nos

  • green Beans cut into bite-size 1/2 cups

  • green peas 3 tbsp

  • sweet corns 2 tbsp

  • boiled Chick peas (optional) 2 tbsp

  • green Chili chopped 1 nos

  • Onion chopped 1 nos

  • cloves Garlic chopped 2 nos

  • Coriander powder 1/2 tsp

  • cumin powder 1/3 tsp

  • Black Pepper crushed 1/4 tsp

  • Olive oil 1 tbsp

  • Salt or as required 1 tsp

  • Vegetable stock. 1 1/2 cups

Directions

    Place a steamer over stove top with salt water.

    Steam together carrot cubes, bean pieces, green peas and sweet corn for 5 minutes.

    Heat 1 tablespoon of olive oil in a pan.

  • 04

    Add chopped onion and saute till onion becomes soft.

  • 05

    Add chopped garlic and chilli and saute for a minute.

  • 06

    Add capsicum cubes and fry for 2-3 minutes.

    Now add the steamed vegetables and boiled chick peas.

    Add salt, coriander powder, cumin powder and pepper crush. Mix well.

    Add 1 cup of couscous and give it a mix.

    Add 1&1/2 cup of vegetable stock(I used the stock left in the steamer).

    Don't stir anymore after adding stock.

    Cook for 1 minute and switch off the flame.

    Rest it untouched for 5-6 minutes to soak the stock completely by couscous.

    When entire stock soaks, take a fork and gently fluff the couscous.

    Transfer to serving bowl, garnish with some green leaves and serve warm.
