In a microwave safe mug , mix together egg white, milk and oil .
Add the bread cubed , schezwan sauce, cheddar , salt and pepper .
Let it stand for 5 minutes for the bread soak up the custard . Press it down so the bread is submerged within the liquid .
Now spread little bit of schezwan sauce and gently set the egg yolk on the top .
Microwave to roughly 1 1/2 - 2 minutes .
Serve straight away while still warm .
I suggest checking it after 1 minutes and go from there .
