Ingredients

Serves 4

  • Long Grained Rice 2 cups

  • ghee/oil 2 tsp

  • Salt as par taste 1 tsp

  • ghee 2 tbsp

  • oil 2 tbsp

  • mustard seeds 1 tsp

  • cumin seeds 1 tsp

  • Green Cardmom 2 nos

  • Cloves 4 nos

  • Stick cinnamon 2 nos

  • Bay leaf 1 nos

  • Medium sized chopped onions 2 nos

  • Cabbage chopped 1/4 nos

  • Carrot chopped 1 nos

  • Green capsicum chopped 1 nos

  • Yellow capsicum chopped 1 nos

  • Tomatoes deseeded and chopped 2 nos

  • Salt as par taste 1 tsp

  • biryani masala 1 tsp

  • Coriander leaves chopped 2 tbsp

  • Some slicesof tomatoes and carrots 5-6 nos

  • roasted cashew nuts 10-12 nos

Directions

    Wash the rice. Take a microwave safe bowl and add ghee/oil and microwave on High for 1 minute.

    Add the rice salt and 4 cups of water and microwave on High for 10 minutes. Remove and keep covered for at least10 minutes.

    Heat a pan and add ghee and oil. Add cardamom cloves cinnamon and bay leaf and saute them.

    Add mustard seeds and cumin seeds. When the seeds crackle add the onions and saute until onion becomes translucent.

    Add cabbage and carrot mix well and saute on a medium flame for 2 minutes.

    Add green and yellow capsicum and mix well and cook for 2-3 minutes.

    Add the tomatoes salt and biryani masala and mix well. Off the flame.

    Add rice and mix well gently. Veg Pulao Rice is ready.

  • 09

    Serve immediately and garnish with chopped coriander leaves, tomato & carrot slices & roasted cashew nuts.
