Pre-heat the oven to 200 degrees C.
Cut the apples in halves and then cut into very thin slices of semi-circle shape.
Transfer the apples in a bowl of water and microwave on high heat for 2 minutes to soften them. Drain on a cloth and pat-dry.
Bring the puff pastry to room temperature and cut lengthwise into 5-6 long strips.
Sprinkle cinnamon sugar generously all over the cut strips.
On each strip, place 7-8 apple slices so that they stick out at the top and overlap each other on one side. Leave half inch space vacant on each side.
Fold the bottom of each pastry strip over the bottom of respective apple slices.
Finally, roll each strip from one end to another to make a Rose shaped tart.
Bake at 200 degrees C, until the tarts look golden brown and apples turn crisp.
Cool and serve warm with chilled Vanilla Ice-cream! Enjoy!
