In a large bowl take all the ingredients except oil, Ghee, Water. Mix well.
Make a well in the center of the flour. Add warm ghee. Mix with the help of a spatula
Mix well until it forms a crumbly texture.
Add water slowly at a time and knead it into a semi-stiff dough. Cover and keep aside for 15-20 minutes.
Divide dough into 5-6 equal parts. Shape them into a smooth ball.
Grease rolling board with the oil. Place prepared dough ball on rolling board and roll evenly from all the sides. It should be little thick. Prick allover using a fork so that puri will not puff up.
Cut them into 3-4inch circle using round cutter.
Repeat the process with remaining dough balls. Prepare all the puris and keep ready for frying.
Heat oil in a wok or Kadai. Fry puries in batches on a low medium flame until light brown and crisp. Don’t overcrowd puries while frying. Avoid them frying on a high flame.
Drain oil completely and place them on a kitchen towel.
Cool and store in airtight container or serve hot with a cup of tea or coffee.
