In a mixing bowl combine all ingredients except eno and mix well using a whisk to get a smooth batter.
Leave the batter for 2-4 minutes.
Now in the batter add fruit salt and pour 1tsp water on top of fruit salt.
Mix well gently for a minute. Pour the mixture immediately to a greased thali and spread evenly by rotating the thali clockwise.
Steam in a steamer for 10 to 12 minutes. or till the khaman are cooked.
When khaman is done let it come to room temperatue and unmold in other plate.
To make tadka heat oil add mustard seeds when it crackles add green chillies.
Then add white sesame seeds and water.
Add sugar, curry leaves, salt, hing, and lemon juice. Now add water.
Let it boil till water reduces to half then pour this tadka over khaman pieces.
Garnish with coriander leaves, grated coconut and fine sev.
Serve with green chutney and chillies.
