  • 2 1/2 cups besan/ gram flour

  • 1 cups potato

  • 3/4 cups spinach

  • 1 tsp turmeric powder

  • 1/2 tsp chilly powder

  • 1 tbsp cumin powder

  • 1 tsp ajwain seeds

  • 1/4 tsp soda bai carbonate

  • 1 tbsp mustard oil

  • 1 tsp salt heaved / to taste


  • Take gram flour in a large bowl. Put little - little water in it and make thick - smooth mixture. This mixture must be beaten for at least for 15 minutes so it will become very light and fluffy. Usually this work is done by palm but wrishk wire make this task very easy.
  • Now mix soda bicarbonate, potato, spinach, turmeric powder, chilly powder, cumin powder, ajwain seeds, hot mustard oil and mix it up properly. Keep aside. We will add salt before frying.
  • Heat oil in a heavy bottom kadai on medium heat.
  • Now add salt and mix it very well.
  • First wet your fingers with water then take small quantity of mixture in hand ; drop small - small size phulori very carefully in oil. I have made it with my hand you could make it with spoon too.
  • After 2-3 minutes flip all badi with the help of stepula. Fry both sides till golden brown colour.
  • Take out phulori from kadai and keep it on tissue paper. Repeat same process till mixture lasts.
  • Serve hot with green chutney, imli chutney, dahi mint chutney and tomato sauce as per your preference.
