Break eggs and keep it in a deep bowl. Wrishk for 2 minutes with help of spoon / wrishk wire till becomes light and smooth.
Mix seasoning mixture, black pepper, salt to taste ; then stir well.
Heat oil in a heavy bottom pan / non-stick pan on high flame then reduce on medium heat.
First put onion and a pinch of salt in pan then saute for a minute.
Then add tomato and spinach ; saute for another one minute.
Mix egg mixture again for a while then put over veggies and spread it all over the pan. Reduce heat on low flame.
Cover the pan with lid and cook omlete till done. It will take hardly 2 minutes / or you can cook as per your preference.
