Serves 2

  • Leftover rice 2 cups

  • Onion finely chopped 1 nos

  • Garlic cloves finely chopped 5 nos

  • Whole red chillies 2-3 nos

  • Cumin seeds 1/2 tsp

  • Mustard oil /vegetable oil 1.5 tbsp

  • Coriander leaves 1 tsp

  • Salt 1/2 tsp

    First heat a heavy bottom kadai on high flame then add mustard oil in it.

    Heat oil till smoke comes out. Now reduce flame on low.

    Break chillies in few pieces then drop cumin seeds and chilly pieces one by one in kadai. Fry for a minute or cumin seeds changes in pink colour.

    First add garlic and fry for 30 seconds ; after that onion and stir well. Increases flame on medium.

    Add salt then stir well. Fry onion till light brown colour. Stir trice while cooking.

    Now add cold rice and stir very well so that salted onion mixture coat everywhere evenly.

    Sprinkle water on rice then stir again. Now reduce heat on low. Cover kadai with lid and cook for another 2 minutes. Switch off the gas stove.

    Remove the lid sprinkle coriander leaves and stir just once very gently.

    Quick, easy and yummy food is ready to serve.
