Heat a heavy bottom pan on medium heat for 1 minute
Put flaxseeds in pan and dry roast for 5 minutes or till starts cracking and releases its aroma. Switch off the gas .
Take out flaxseeds from pan and cool down under fan air.
Now heat 1/2 portion of oil / ghee on medium heat. First fry cashew nuts and almonds one by one on medium heat till light brown colour. Take out from oil and cool down.
Now increase flame on high and heat ghee again. Put less than 1/4 cup sago in hot ghee and fry it. Stir continuously while frying. Take out sago in a big plate so it will cool down quickly.
Now heat rest of ghee / oil in pan ; heat on high flame.
Divide rest of sago in 2 parts so we can fry easily. Stir continuously while frying so prevent it from burning. Take out in plate and cool down.
Now add sugar and 1/4 water in same pan on medium heat for 2 minutes. Stir well.
Now increase flame on high. Stir continuously while making caramel sugar sirup.
After 10 minutes sugar will change its colour and starts bubbling. At this point sugar will change in brown colour. Now first decrease gad flame on low heat.
Add all ingredients fried sago, flaxseeds, almonds, walnuts and cashew nuts in sugar sirup. Stir several times till sugar coats everything evenly
Switch off the gas stove. Spread this mixture on almunium foil quickly and give square shape so we can get more good pieces.
Take a sharp knife. Mark pieces lines quickly as your preference. Let it cool down then break pieces according to marked lines.
I have used rolling pin while breaking pieces. It was a very helpful tool for get almost 95% good pieces. Let it cool down completely.
Keep energy bars in a dry airtight container.
You can make it as laddoo shape too when mixture is hot. It's very easy to get shape of laddoo.
