Ingredients

Serves 4

  • dry grated Coconut 1/2 cups

  • onion 2 nos

  • Tomatoes finely chopped 3 nos

  • ginger garlic paste 1 tbsp

  • Coriander seeds 1 tsp

  • Whole garammasala: Cardamom 2 nos

  • cloves 2-3 nos

  • cinnamon 1 tsp

  • shahi jeera 1 tsp

  • star anise 1 nos

  • black peppers 4-5 nos

  • javetri, 1 nos

  • tej pata 1 nos

  • poppy seeds 1 tsp

  • Cashews( soaked) 8-10 nos

  • watermelon seeds( soaked) 2 tbsp

  • turmeric PD 1/2 tsp

  • Byadgi dry chillies 8-10 nos

  • Kolhapuri Masala 1 tbsp

  • Salt to taste 1 tsp

  • oil 3-4 tbsp

  • Vegetablesof your choice:Carrot 2 nos

  • Small potatoes 2 nos

  • chopped beans 1/4 cups

  • baby corn 2-3 nos

  • corn 2 tbsp

  • cauliflower 1 cups

  • green yellow red bell peppers 1/2 cups

  • Oil to fry veggies 1 cups

  • Coriander leaves 1/4 sprig

Directions

    Heat a kadai add little oil Fry onion till soft

  • 02

    In same kadai add whole garam masala,drycoconut, poppy seeds,red chillies,coriander seeds n fry till golden brown.

    Make a fine paste of fried ingredients, along with cashew n watermelon seeds.

    In a kadai heat oil and fry all the vegetables one by one.

    In a pan heat oil add 1finely chopped onion, n fry till light golden brown in colour.

    Now add ginger garlic paste and chopped tomatoes.

    Add turmeric salt and kolhapuri masala.

  • 08

    Add grinded masala n mix well.

  • 09

    Adjust water and cook for 1-2 minutes.

    Finally add vegetables,again check the seasoning and cook for 5-6 mins or till vegetables cook well.

    Add finely chopped coriander leaves and off the gas.

  • 12

    Garnish with coriander leaves and serve hot.
