Ingredients

Serves : 4
  • 1/2 cups dry grated coconut


  • 2 nos onion


  • 3 nos tomatoes finely chopped


  • 1 tbsp ginger garlic paste


  • 1 tsp coriander seeds


  • 2 nos whole garammasala: cardamom


  • 2-3 nos cloves


  • 1 tsp cinnamon


  • 1 tsp shahi jeera


  • 1 nos star anise


  • 4-5 nos black peppers


  • 1 nos javetri,


  • 1 nos tej pata


  • 1 tsp poppy seeds


  • 8-10 nos cashews( soaked)


  • 2 tbsp watermelon seeds( soaked)


  • 1/2 tsp turmeric pd


  • 8-10 nos byadgi dry chillies


  • 1 tbsp kolhapuri masala


  • 1 tsp salt to taste


  • 3-4 tbsp oil


  • 2 nos vegetablesof your choice:carrot


  • 2 nos small potatoes


  • 1/4 cups chopped beans


  • 2-3 nos baby corn


  • 2 tbsp corn


  • 1 cups cauliflower


  • 1/2 cups green yellow red bell peppers


  • 1 cups oil to fry veggies


  • 1/4 sprig coriander leaves

Directions

  • Heat a kadai add little oil Fry onion till soft
  • In same kadai add whole garam masala,drycoconut, poppy seeds,red chillies,coriander seeds n fry till golden brown.
  • Make a fine paste of fried ingredients, along with cashew n watermelon seeds.
  • In a kadai heat oil and fry all the vegetables one by one.
  • In a pan heat oil add 1finely chopped onion, n fry till light golden brown in colour.
  • Now add ginger garlic paste and chopped tomatoes.
  • Add turmeric salt and kolhapuri masala.
  • Add grinded masala n mix well.
  • Adjust water and cook for 1-2 minutes.
  • Finally add vegetables,again check the seasoning and cook for 5-6 mins or till vegetables cook well.
  • Add finely chopped coriander leaves and off the gas.
  • Garnish with coriander leaves and serve hot.
