Heat a kadai add little oil Fry onion till soft
In same kadai add whole garam masala,drycoconut, poppy seeds,red chillies,coriander seeds n fry till golden brown.
Make a fine paste of fried ingredients, along with cashew n watermelon seeds.
In a kadai heat oil and fry all the vegetables one by one.
In a pan heat oil add 1finely chopped onion, n fry till light golden brown in colour.
Now add ginger garlic paste and chopped tomatoes.
Add turmeric salt and kolhapuri masala.
Add grinded masala n mix well.
Adjust water and cook for 1-2 minutes.
Finally add vegetables,again check the seasoning and cook for 5-6 mins or till vegetables cook well.
Add finely chopped coriander leaves and off the gas.
Garnish with coriander leaves and serve hot.
