Yellow Pumpkin Fritters

Description

In this recipe, I have used Yellow Pumpkin coated with gram flour seasoned with some spices and deep fried.  It goes well with tea, coffee as an evening snack or with dal rice as a side dish.

Ingredients

Serves : 4
  • 3/4 cups yellow pumpkin (peel and cut into 1/4 inch fries or sticks)


  • 3/4 cups gram flour / besan


  • 1/2 tsp red chili powder


  • 1/2 tsp garam masala


  • 1/4 tsp asafoetida


  • 1/2 tsp cumin seeds


  • 1-2 tbsp coriander leaves finely chopped


  • 2 cups oil for frying


  • 1/4 tsp salt for batter or to taste


  • 1/4 cups water as required to make thick batter

Directions

  • Slice the yellow pumpkin in half. Remove pulp and seeds. Chop the ends off of each half of the pumpkin.
  • Slice one half into two. Peel it. Cut these into 1/4 inch medium sticks or fries. Reserve the remaining half.
  • Transfer these fries into a plate, add salt. Mix well.
  • In a bowl mix all dry ingredients except fries, oil, and water.
  • Add water slowly at a time and make a thick batter.
  • Heat oil in a pan or wok.
  • Dip sticks or fries into the batter, coat properly from all the sides and fry on low- medium flame until golden and crisp.
  • Serve hot with dal rice or any dip or chutney.
