Description

Boondi or Bonde is a popular dish which is served as a sweet dessert or spicy evening snack along with tea or coffee. It is easy to prepare and used in making various dishes, Ladoo, shev boondi, or even in curries or making bhaji. In many regions, Boondi is used in salad, popularly called as Boondi raita.

Ingredients

Serves : 4
  • 1 cups besan / gram flour


  • 1 1/2 tbsp rice flour


  • 1/4 tsp baking soda


  • 1 tsp turmeric


  • 1/4 tsp salt to taste


  • 1 tbsp oi + 2-3 cups l for frying


  • 1/2 cups water


  • 1/4 cups for serving flavored shev or chat masala, red chili powder

Directions

  • Heat oil in a wok or kadai.
  • In a bowl take Gram flour, salt, turmeric, baking soda. Mix well.
  • Add 1tbsp oil. Mix it.
  • Add water slowly at a time and prepare a thick batter. Whisk well. It should be smooth and lump free.
  • Take perforated spoon or Jharani. Hold it above the oil. Add a ladleful gram flour batter on the center of it.
  • Move ladle in a circular motion, allow the batter to go through the jharani or perforated spoon. This will form small round balls or Boondi.
  • Deep fry boondi on medium-low flame until golden brown and crisp.
  • Remove it using a slotted spoon. Drain it and transfer on kitchen towel.
  • Repeat the process with remaining batter.
  • Serve to add flavored shev as a shev boondi or add chili powder, sprinkle some chat masala and serve as a masala boondi with hot tea or coffee.
