Description

Tabbouleh is also known as tabouleh, tabbouli, tabouli is a Levantine vegetarian salad traditionally made of finely tomato, parsley or cilantro, mint, spring onion and bulger wheat seasoned with salt, black pepper, lemon juice, and olive oil. This is quite popular Mediterranean salad which takes little time for preparation and is extremely healthy and tasty.   In some places, finely chopped cucumber, minced garlic, lettuce or couscous is also been used in this recipe. In this recipe, I have used coarse bulger or Dalia or Broken wheat instead of fine bulger and Cilantro leaves instead of Parsley.  Fine bulger does not require hot water for soaking.

Ingredients

Serves : 4
  • 4 tbsp spring onion greens finely chopped


  • 2-3 nos spring onion bulbs (finely chopped)


  • 1 cups cucumber


  • 3/4 cups tomato


  • 1/2 tsp black pepper freshly ground


  • 1/2 tsp lemon juice


  • 7-8 nos mint leaves


  • 2 tbsp coriander or cilantro leaves / parsley finely chopped


  • 1/4 tsp salt small pinch


  • 1-2 tbsp olive oil extra virgin


  • 1/2 cups bulgar wheat /broken wheat/dalia


  • 1 1/2 cups boiling hot water for soaking bulgur wheat

Directions

  • Soak bulgur wheat in boiling hot water. Cover and keep aside for 8-10 minutes. Strain it completely. Squeeze the wheat using hands to get rid of any excess water. Keep aside.
  • In a large bowl mix all 9 ingredients except bulgur wheat and olive oil. Mix gently.
  • Add bulger wheat and toss it.
  • Add Extra virgin olive oil. Mix gently.
  • Transfer in refrigerator for 10-20 minutes or serve immediately.
