Description

Pumpkin is available throughout the year in variety; Red, Yellow, White, Green and consumed worldwide in various ways. It can be consumed raw in the form of salad, raita or used in curries, subjis, making desserts like kheer, laddu etc. In Maharashtra, Konkan, Goa, South region pumpkin leaves, flowers are also used in many dishes. This is a traditional Maharashtrian recipe which is prepared in every household on regular basis. Bhoplyache bharit or raita is consumed as a side dish along with dal rice subji.

Ingredients

Serves : 4
  • 1 cups peeled, grated yellow pumpkin


  • 3/4 cups curd


  • 1/2 tsp sugar


  • 1/4 tsp asafoetida


  • 1/2 tsp cumin seeds


  • 1-2 nos green chili roughly sliced


  • 3 tbsp roasted crushed peanuts


  • 1 tsp oil cooking pumpkin


  • 1/2 tsp for tadka or tempering.


  • 1/4 tsp salt to taste

Directions

  • Heat oil in a pan or wok, add grated pumpkin. Sauté for 2-3 minutes on a high medium flame. Switch off the flame and let it cool.
  • In a bowl take curd, add sugar and salt. whisk well until sugar dissolves.
  • In another large bowl take grated and sautéed pumpkin. Pour curd mixture. Add roasted peanuts.
  • In a saucepan or tadka pan, heat oil, add cumin seeds, let them splutter and sizzle. Add asafoetida, green chili. Sauté for few seconds. Pour this tempering over pumpkin raita. Mix well.
  • Serve this raita immediately with dal rice
