Description

Za’atar mix is a Mediterranean aromatic spice mix popular throughout the middle east, used widely in middle eastern cuisine. Zaatar spice mix can be prepared easily at home using a few herbs and spices; Oregano or Thyme, cumin, Toasted white sesame seeds, toasted coriander seeds, sumac or lemon zest. This spice is used in flavoring baba ghanoush, Pita bread, Hummus, chicken etc. In this recipe, I have used spice mix to marinate eggplants or brinjals, coated them with rice flour for crispiness and shallow fried. This is a quick recipe can be prepared anytime and tastes amazing.

Ingredients

Serves : 2
  • 1 nos eggplant/brinjal/baingan medium sized large (sliced 1/2 inch)


  • 1/4 cups za’atar spice mix


  • 1/2 cups rice flour


  • 3-4 tbsp oi lfor shallow frying


  • 1/2 tsp salt or a small pinch


  • 2 cups water for brinjal slices

Directions

  • Wash, and slice eggplants. In a bowl take water add salt and dip eggplant slices.
  • After 5-7 minutes remove them and pat dry using a kitchen towel or tissue paper.
  • In a bowl, take eggplant slices to add Za’atar Spice mix and mix well until they coat well with the mix. Spice mix already contains salt so no need to add extra salt.
  • Spread rice flour in a plate. Dredge the eggplant slices one at a time. Keep aside.
  • Heat oil in a Grill pan. Gently place coated eggplant slices.
  • Fry them on a low-medium flame from both the sides until soft from inside and crispy outside. Drizzle some oil and press the slices with the help of spatula in between while frying.
  • Serve hot with dal rice or any dip or Tahini Sauce.
