Ingredients

  • 25 gms for coriander water:::coriander


  • 15 gms mint leaves


  • 2 nos green chili


  • 2 tsp black salt


  • 1 tbsp lemon juice


  • 2 tbsp water while grinding


  • 3 cups water


  • 2 tbsp boondi


  • 2 tsp for asafoetida water::::asafoetida


  • 1 tsp black salt


  • 2 tsp chaat masala


  • 1.5 tbsp tamarind paste


  • 3 cups water


  • 2 tbsp boondi


  • 25 gms (for mint water)::::::mint leaves


  • 20 gms green chili


  • 1 tsp black salt


  • 1 tsp chaat masala


  • 3 cups water while grinding


  • 3 cups water


  • 2 tbsp boondi


  • 2 tbsp for cumin water::::roasted cumin powder


  • 1 tsp black salt


  • 2 tsp chaat masala


  • 1 tbsp lemon juice


  • 3 cups water


  • 2 tbsp boondi


  • 360 gms for potato filling:: boiled potatoes


  • 110 gms onions


  • 1 tbsp coriander


  • 1 tbsp mint


  • 1 tbsp red chili


  • 1 tbsp cumin powder


  • 1 tsp chaat masala


  • 1 tsp salt


  • 1 tsp lemon juice


  • 1 cups for puris :sooji


  • 1/4 cups all purpose flour


  • 1/2 tsp salt


  • 1/2 cups water

Directions

  • For Coriander Water
  • Blend into a smooth paste all the ingredients except water and boondi.
  • Pour it into a bowl, add water, boondi and mix it well.
  • For Asafoetida Water
  • Blend into a smooth paste all the ingredients except water and boondi.
  • Pour it into a bowl, add water, boondi and mix it well.
  • For Mint Water ::Blend into a smooth paste all the ingredients except water and boondi.
  • Pour it into a bowl, add water, boondi and mix it well.
  • For Cumin Water:: In a mixing bowl, add all the ingredients and mix it well.
  • For Potato Filling:: In a mixing bowl, add all the ingredients and mix it well.
  • Puri Making::Take all the puri ingredients in a bowl. mix all well and knead a smooth dough . let it sit for 15 minutes.
  • sooji will soak all the water and the dough remains soft.
  • Divide the dough in 2 parts and start rolling into a big chapati , with the help of cookie cutter or any container cap cut into round puris.
  • fry it in a hot oil. All puris will pluf on its own. It will Make 40 Puris
  • Assembling Pani Puri: Take some puris and crack them from top. Fill the potato mixture in it.sprinkle some sev on top.
  • Top with sweet chutney.
  • Pour the pani in each puri.
  • Enjoy 4 various flavors pani puris.
