Ingredients

Serves 10

  • 2 cups all purpose flour

  • 1/2 tsp baking soda

  • 80 gm ghee

  • 80 gm mango puree

  • 2 cup sugar

  • 1 cup water

  • 1/2 tsp saffron strands(soaked in water)

  • 1/2 tsp cardamom powder

  • 1 tsp lemon juice

  • 2 tsp chopped pistachios,for garnish

Directions

    Sieve flour and baking powder together.

    Add ghee and mango puree.

  • 03

    Bring the flour mix to make a dough, do not over knead.

  • 04

    Cover and keep the dough for 10-15 minutes.

    To make sugar syrup,take sugar and water in a pan.

    Keep stirring on low to medium flame.

    Add saffron,cardamom powder and lemon juice.

    Cook the syrup till it reaches one string consistency.

    Take oil in a big wok to fry the balushahi.

    Roll the dough into a square and cut in between.

    Keep one piece over the other and roll into a square again.

    Repeat this process 5-6 times and then roll it into a cylinder.

    Cut equal pieces from this cylinder.

    Roll each piece into spherical shapes and make a hole in centre.

    Fry the balushahi on low flame till golden brown.

    Soak these in warm syrup for 5-10 mins till they soak the syrup.

    Take out from the syrup and let them cool a little .

    Garnish with pistachios and serve.
