Preheat oven to 375F. Spary madeleine mold with non-stick baking spray.
Beat eggs until foamy, then slowly add in sugar. Mix only to
combine. Stir in vanilla extract, then sift in flour and
fold in. Stir in melted butter.
Scoop 1 heaping T of batter into each madeleine mold, then bake for about
14 min or until outer edge of madeleine is golden brown. Let cool for 2 min,
then gently remove with butter knife.
