Ingredients

Serves : 2
  • 3 cups for gajar halwa(1): grated carrots


  • 3 tbsp cardamom


  • 1/2 cups castor sugar


  • 15 nos almonds


  • 10 nos cashew nuts


  • 1/2 cups butter/fresh ghee


  • 1 cups fresh milk(as per the consistency)


  • 2 drop rose essence


  • 2 drop vanilla essence


  • 2 cups carrots(grated)

Directions

  • In a heavy bottomed pan add ghee and then add grated carrots, castor sugar and cardamom
  • Sauté the mixture well
  • Once the carrots are roasted enough add fresh thick milk.
  • Bring the mixture to a nice boil and simmer it for about 5 minutes.
  • Stir the mixture continuously for about 10 minutes till it's half reduced (get thickened)
  • For carrots caramel sauce:
  • In small bowl add in the chopped carrots and leave it with cold water for about 10 to 15 min.
  • Then in large sauce pan roast the carrots with castor sugar for a nice natural colour.
  • In a blender add in the chopped carrots and blend it to a fine pate
  • In a pre-heated bottomed pan add butter and then add blended paste and sauté it.
  • Mix the mixture till it combine well.
  • Add in few drops of vanilla essence/rose essence to a flavour kick.
  • Mix the mixture well enough till it forms a thick sauce or reduced.
  • For carrot lava cake:
  • In a large bowl add in the crumbled mixture of Oreo biscuits, ginger biscuits, and some ordinary light biscuits for making firm dough.
  • Add in a fresh thick milk and vanilla essence and combine well.
  • Add in a fresh thick milk and vanilla essence and combine well.
  • Add in roasted almond and cashew and mix well and set the mixture aside for about 10 min.
  • Using a desired mould, place the biscuit mixture on to the moulds elegantly.
  • Place some desired heavy shaped vessels upon it and leave it to set in to the refrigerator.
  • Refrigerate the mixture for about an hour till it sets well.
  • De mould the carrot cake and set aside.
  • For makeover:
  • Take a flat black coloured plate (depends on choice)
  • De mould the gajar halwa cake from the mould and place gently on to the garnishing plate.
  • Now apply the carrot caramel sauce as per desire (plating art) (give a touch of heat to carrot caramel sauce if it is too thick in consistency, so that it would be easier to plate up)
  • Now dust some icing sugar or powdered castor sugar on to the cake.
  • Place the square shaped chopped caramel carrots in a garnishing way.
  • Place the edible flowers made of sugar and colour essence.
  • Now the deconstructed gajar halwa representing carrot lava cake with carrot caramel sauce is ready to serve.served hot.
