  • 3 cups pitta bread:wheat flour or all purpose flour

  • 1 pinch salt

  • 1 1/2 tsp yeast

  • 3 tbsp oil

  • 1 cups warm water

  • 5-6 piece greek gyros: boneless chicken (shredds)

  • 1 tsp ginger/garlic paste

  • 4-5 nos chilli flake

  • 1 tsp little vinegar

  • 1 pinch salt

  • 1/2 tsp blackpepper powder

  • 1/4 tsp chaat masala

  • 1/2 cups salad: lettuce, onions and cucumber (shredds)

  • 1 pinch black pepper powder

  • 1/2 cups grated cheese (cheddar or parmesan o feta)

  • 1 tsp vinegar

  • 1 tsp olive oil

  • 2 tsp mayonaise (optional)


  • bind all using water to a soft dough and let it rest for an hour or 2
  • punch back and make balls, let it rise for 15mins, then make thick (1/2 cm) hand sized puris cut one edge to give you pockets than lay pockets on greased tray, let it rise for 15mins den bake in oven on 200°C.
  • Slit the puris from the cut edge to give a pocket
  • Chicken Greek Gyros: Saute the above in oil til done
  • Smoke the filling to give barbeque aroma (optional), (make a foil bowl, put 1/2 tsp ghee and put red hot charcoal then lower it in the chicken pan and cover it).
  • let it cool
  • Salad:mix ol well then add chicken and do filling in pockets.
