  • 1 tbsp sour curd

  • 1 cups all purpose flour

  • 1 tsp gram flour

  • 1/2 tsp baking powder

  • 2 cups sugar

  • 2 cups water

  • 2-3 nos kesar

  • 1/2 tsp cardamon powder

  • 2 litre for rabri :milk

  • 1 cups sugar

  • 1/2 litre ghee for frying

  • 1/4 tsp orange food colour


  • Firstly mix curd,all purpose flour,gram flour in a bowl.
  • Add water and form a thick flowing consistency..
  • Allow this batter to ferment for 12 hrs.
  • After fermentation..you willl notice bubbles in the batter..if yout batter is thick..you can add little water and make proper consistency..
  • Add baking powder ,orange food colour and mix well
  • Heat ghee(clarified butter) for frying in a broad flat base work.
  • Take a cloth and make a small hole in the center.
  • Now arrange the cloth in the center of bowl.transfer the batter in the cloth..
  • Tie the cloth properly holding firmly from the top.
  • Now drop the batter into the medium hot ghee turning your hand in circles to make round jalaebis.
  • Fry till the jalaebis are crispy..
  • Make sugar syrup on the another gas flame sideby.
  • Add sugar and water in a vessel and boilt till you get 1 string consistency..
  • Add saffron and cardamon powder and mix well.
  • Now transfer the fried jalaebis in sugar syrup ..let it soak for 5 min ..
  • Remove and keep aside.
  • Lets make rabri.. boil milk in a vessel..
  • Wait till the milk reduces to half..
  • Add sugar and mix well..
  • Let rabri cool..
  • Serve jalaebis with rabri..
