Ingredients

Serves 10

  • Sour curd 1 tbsp

  • All purpose flour 1 cups

  • Gram flour 1 tsp

  • Baking powder 1/2 tsp

  • Sugar 2 cups

  • Water 2 cups

  • Kesar 2-3 nos

  • Cardamon powder 1/2 tsp

  • For rabri :milk 2 litre

  • Sugar 1 cups

  • Ghee for frying 1/2 litre

  • Orange food colour 1/4 tsp

Directions

    Firstly mix curd,all purpose flour,gram flour in a bowl.

    Add water and form a thick flowing consistency..

    Allow this batter to ferment for 12 hrs.

    After fermentation..you willl notice bubbles in the batter..if yout batter is thick..you can add little water and make proper consistency..

    Add baking powder ,orange food colour and mix well

    Heat ghee(clarified butter) for frying in a broad flat base work.

    Take a cloth and make a small hole in the center.

    Now arrange the cloth in the center of bowl.transfer the batter in the cloth..

    Tie the cloth properly holding firmly from the top.

    Now drop the batter into the medium hot ghee turning your hand in circles to make round jalaebis.

    Fry till the jalaebis are crispy..

    Make sugar syrup on the another gas flame sideby.

    Add sugar and water in a vessel and boilt till you get 1 string consistency..

    Add saffron and cardamon powder and mix well.

    Now transfer the fried jalaebis in sugar syrup ..let it soak for 5 min ..

    Remove and keep aside.

    Lets make rabri.. boil milk in a vessel..

    Wait till the milk reduces to half..

  • 19

    Add sugar and mix well..

    Let rabri cool..

  • 21

    Serve jalaebis with rabri..
