Buckwheat Ash Gourd Halwa Tartlets

Ingredients

Serves : 3
  • 110 gms buckwheat flour


  • 40 gms cold ghee


  • 2-5 tbsp cold water


  • 2-3 tbsp powdered sugar


  • 1 cups grated ash gourd


  • 1/2 cups sugar adjust


  • 1 pinch saffron


  • 1/4 cups water


  • 2 tbsp ghee


  • 10-12 nos cashews


  • 1/4 tsp cardamom powder

Directions

  • Mix flour and sugar well in a bowl
  • Add cold ghee and mix well
  • Add cold water 1 teaspoon at a time. Do not add all at once. Add as required. Mix until dough comes together
  • Cover dough with cling wrap
  • Pat dough and refrigerate for 1 hour
  • Grease tartlets moulds with ghee and flour
  • Roll the dough. Since this gluten free, it will break. Roll into circles bigger than molds
  • Press into molds and trim excess. freeze for 30 minutes
  • Prick with fork all over and place on baking tray
  • Bake for 15-18 minutes until golden brown in preheated oven at 180
  • Cool the crust
  • In a pan, roast cashews in 1 teaspoon ghee until golden brown. Take out and keep it aside
  • In same pan, add Ash Gourd and saute for 2-3 minutes
  • Add water and mix well
  • Cover and cook stirring occasionally until raw taste disappears
  • Add sugar and mix well
  • Add saffron and mix well
  • Cook until mixture leaves sides of the pan
  • Add 2 tbsp ghee and mix well
  • Add cardamom powder and roasted cashews. Mix well
  • Add halwa to bake tartlets
  • Serve delicious tartlets
