Delicious gujarati subji made mostly in marriage ceremony

Ingredients

Serves : 3
  • 2 nos small karelas


  • 2 tbsp cashew nuts


  • 1 tsp salt


  • 1 tbsp oil


  • 1/4 tsp hing


  • 1 tsp corriander n jeera powder


  • 1 tsp red chilli pwd


  • 1/4 tsp turmeric pwd


  • 1/4 tsp garm masala pwd


  • 2 tsp powdered sugar


  • 2 tsp jaggery


  • 1 tbsp kishmish


  • 1/2 cups water


  • 2 tbsp corriander leaves chopped


  • 2 cups oil for frying

Directions

  • Time 1 hr + 20 mnts
  • Remove skin of Karela n cut lengthwise in to small strips remove seeds
  • Sprinkle 1/2 teaspoon salt mix n leave it for 1 hr
  • Then squeeze extra water from karela n deep fry till light brown
  • Fry cashewnuts till colour changes to golden
  • Heat 1 tablespoon oil in a pan
  • Add hing stir n add 1 tablespoon corriander kishmish stir for 1 minute
  • Add karela cashew 1/4 cup water n stir cook for
  • 1 minute
  • Add corriader cumin pwd red chilli pwd turmeric pwd garam masala pwd 1 teaspoon sugar jaggery salt mix n add remaining water n cook for 2 mnts
  • Then add 2 teaspoon powdered sugar n mix
  • Garnish with remaining corriander leaves n serve
