Ingredients

  • Baby Brinjals (cut lengthwise) 5 nos

  • Potatoes (wedges) 3 nos

  • Onion (chopped) 1 nos

  • Tomato (chopped) 1 nos

  • Curry Leaves (chopped) 8-10 nos

  • Fenugreek, Mustard and Cummin seeds 2 tsp

  • Salt 1 pinch

  • turmeric powder 1/4 tsp

  • Chilli powder 1/2 tsp

  • Garlic paste 1/2 tsp

  • Sabzi masala 1/2 tsp

  • Green Chilli (chopped) 1 nos

Directions

  • 01

    braise onion in 4 tbsp oil til pinkish color add garlic, curry leaves, green chillies, fenugreek, cummin and mustard seeds let it splutter do stir

  • 02

    add tomato and saute add spices and salt and mix well

  • 03

    add potatoes and little water then cook till all most done add brinjals and simmer and when it dries a little keep off flame

  • 04

    garnish with chopped corriander leaves
