Ingredients

Serves : 3
  • 1 cups cashews


  • 1 cups firm tofu


  • 6 tsp lime juice


  • 3-4 tbsp agave syrup


  • 1/8 tsp saffron + 2 tsp lime juice


  • 1/8 tsp ground nutmeg


  • 1/16 tsp salt


  • 1/2 cups water


  • 1/4 cups chopped pistachios


  • 1 tsp dried rose petals

Directions

  • Soak cashews in water for an hour
  • Combine saffron strands and 2 tsp lime juice in a small bowl
  • Drain water from cashews and place them in a mixer jar along with 1/2 cup fresh water and blend to a fine paste
  • Add drained and blotted tofu to the jar and blend to a silky smooth texture
  • Now tip in 6 tsps of lime juice, salt, nutmeg and agave syrup and blend to combine
  • Transfer contents of the jar to a bowl and fold in the saffron infused lime juice and refrigerate till you serve
  • Prepare the garnishing...dry roast pistachios. Thrown in rose petals and 1 tsp of agave and give a good mix
