Soak cashews in water for an hour
Combine saffron strands and 2 tsp lime juice in a small bowl
Drain water from cashews and place them in a mixer jar along with 1/2 cup fresh water and blend to a fine paste
Add drained and blotted tofu to the jar and blend to a silky smooth texture
Now tip in 6 tsps of lime juice, salt, nutmeg and agave syrup and blend to combine
Transfer contents of the jar to a bowl and fold in the saffron infused lime juice and refrigerate till you serve
Prepare the garnishing...dry roast pistachios. Thrown in rose petals and 1 tsp of agave and give a good mix
