In a bowl put water, yeast and sugar and keep aside for 15 minutes to activate the yeast.
In a large mixing bowl put flour, salt, curd and ghee. Rub well .
Now add the activated yeast and mix again. Add milk little by little and prepare the dough.
Cover and keep aside . Let it rest for 1 hour. In another bowl put all the ingredients for filling and mix well.
Divide it into 5 equal portions . Once the dough doubles in size gently degas it and divide into 5 equal portions .
Dust little flour on workstation and roll a ball into a small circle. Now put 1 portion of filling in the centre and fold in the sides of the circle.
Cover and wrap properly. Now roll again to oval shape with 1/4" thickness.
Apply some water on 1 side of the kucha and sprinkle some mint leaves n kalonji on the surface .
Press gently . Put this side on the tawa and cook on slow flame for 5 minutes.
Now flip it over and cook from another side. Remove from tawa once done.
