Ingredients

Serves : 4
  • 2 cups basmati rice


  • 1 cups thick curd


  • 5 nos onions cut in slices


  • 1 nos potato cut into cubes


  • 1 nos carrot cut into cubes


  • 1/2 cups peas


  • 4 nos french beans cut in big pieces


  • 4 nos cauliflower pieces


  • 1 nos capsicum cut into cubes


  • 2 tbsp whole spices(green & black cardemon, cloves, black pepper, star anise, bay leaves, cinemon)


  • 3-4 nos few stands saffron


  • 1/2 cups milk


  • 1 tbsp biryani masala


  • 2 tbsp fresh ginger garlic paste


  • 1 cups ghee


  • 1 tsp salt to taste


  • 2 tsp turmeric powder


  • 1 tsp chilli powder


  • 2 tbsp cashew and raisins

Directions

  • First wash and soak rice with salt.
  • Now heat ghee in a pan and fry onions and dry fruits in it.
  • Now add whole spices in ghee and fry ginger garlic paste. Now add all spices and vegetables.
  • Add curd also and cook the veggies half cooked.
  • Now cook rice with whole spices till 3/4 cook.
  • Now add saffron in luck warm milk.
  • Now layer the briyani in a thick bottomed pan.
  • First grease the pan and layer with rice.
  • Now vegetable layer and pour little saffron milk and ghee.
  • as same way put 2 more layers.
  • Top with fried onion and dry fruits.
  • Seal the edges with aata n keep the pot on a iron tawa n cook on slow gas for one hour.
