In a mixing bowel, add maida, atta, kalojeera, joyan and salt and mix them well.
Add ghee and little water and knead the mixture properly to make a soft dough. Pound the dough as much as possible to make sure it is soft and smooth.
Make medium sized balls from the dough and roll them to make rotis.
Now, using a knife, cut slices from the rotis (vertically and diagonally) to get diamond shaped pieces (each piece approx 1 inch).
Heat required oil in a pan and deep fry the pieces until they turn golden in colour.
Spread paper in a plate and remove the fried crackers to it. The paper will soak the excess oil.
Your Kata Nimki is ready now.
