Kata Nimki / Kucho Nimki (Salted Crackers)

Description

Cooking Time

Preparation Time :10 Min

Cook Time : 15 Min

Total Time : 25 Min

Ingredients

Serves : 4
  • 1 cups all purpose flour (maida)

  • 1 cups wheat flour (atta)

  • 1 tsp nigella seeds (kalonji/kalojeera)

  • 1 tsp ajwain/joyan

  • 3/4 tsp salt

  • 3 tsp ghee

  • 2 cups oil (or as required for deep frying)

Directions

  • In a mixing bowel, add maida, atta, kalojeera, joyan and salt and mix them well.
  • Add ghee and little water and knead the mixture properly to make a soft dough. Pound the dough as much as possible to make sure it is soft and smooth.
  • Make medium sized balls from the dough and roll them to make rotis.
  • Now, using a knife, cut slices from the rotis (vertically and diagonally) to get diamond shaped pieces (each piece approx 1 inch).
  • Heat required oil in a pan and deep fry the pieces until they turn golden in colour.
  • Spread paper in a plate and remove the fried crackers to it. The paper will soak the excess oil.
  • Your Kata Nimki is ready now.
