Ingredients

Serves : 4
  • 1 cups maida (all purpose flour)


  • 1 tbsp besan (gram flour)


  • 1/4 cups oil


  • 1/4 tsp salt


  • 1/2 cups paani: tamarind pulp (tamarind boiled with dates n sugar)


  • 1/2 cups mint leaves


  • 1/4 cups corriander leaves


  • 1 pinch salt


  • 3 tbsp sugar


  • 1 nos green chilli


  • 1/2 tsp chaat masala


  • 1/2 tsp cummin powder


  • 6-7 nos green chutney:green chillies


  • 1 tbsp roasted chana/dalia


  • 1 nos garlic clove


  • 1 nos lemon juice


  • 1 pinch salt


  • 1/4 cups corriander leaves


  • 8-10 nos mint leaves


  • 3-4 nos red chutney:red chillies (remuv seeds)


  • 2 nos garlic cloves


  • 1 pinch salt


  • 1 tsp lemon juice


  • 1/4 cups rosted peanuts


  • 2 nos filling:boiled potatoes (cubed finely, sprinkled salt n chilli powder)


  • 1 cups boiled moong (bean sprouts) or chana (gram)


  • 2 nos onion (chopped)


  • 1 cups unsweetened boondi (optional)


  • 1/2 cups sev (namkeen)


  • 1/4 cups dahi/yogurt (for dahi puri)


  • 1/4 cups corriander leaves


  • 2 tsp green n red chutneys

Directions

  • Puris:bind to soft dough, then make 2 balls
  • Roll the balls into thin roti, use round cutter n mek puris...
  • Poke all over puris wid butter knife...
  • Kip wok on flame add oil in it, n fry on med flame to crispy puris.
  • When cold store in airtight container
  • Paani:blend ol very little water to get thick chutney then keep in fridge to chill...
  • Green Chutney:blend all well with very lil water to a paste... Keep in a bowl
  • Red Chutney: blend ol to smooth paste
  • How to make Sev Puri on a platter:Lay puris til plate occupied, sprinkle potatoes, chana or moong
  • Then pour lil tamarind chutney n green chutney n red chutney
  • Sprinkle some onions, sev n corriander leaves
  • can serve tamarind n chillies chutney aside too.
  • For Dahi Puris:Do same as sev puri jus before you put tamarind chutney put some dahi/yogurt (sprinkle chilli powder optional) then put tamarind chutney n rest as it is
  • NB: neva hot chutneys to any1 unless they tek it hot
