Spray oil in a pan and Heat it. Add onions to it and let it saute.
Add spinach, bell pepper with some salt and saute for 2-3 minutes.
Pour Egg into the pan and slowly scramble the eggs until cooked and keep aside.Drizzle with some cheese if you like.
Crepes; Take a bowl and add flour, milk, oil, salt and egg.
Whisk until mixed, do not overmix.Heat a skillet on to medium-high.Pour 1/4 cup of batter and roll it into a crepe(if you have a crepe roller that will make it flatter and even).
Let it cook on medium to low flame and flip and cook for a minute.
Place crepes on serving dish. Add some cheese. Place the prepared stuffing and drizzle over some hot sauce.
Now start rolling the crepe from one end to the other with the stuffing inside.Serve Hot.
