  • 12 litre full fat milk

  • 120 gms sweet potato

  • 3-4 tbsp sugar adjust

  • 1/4 tsp cardamom

  • 2 tsp ghee

  • 8-10 nos cashews

  • 5-6 nos saffron strands

  • 1/4 tsp rose water optional


  • Pressure cook sweet potato until just done. Dont overcook else it will be mushy peel and grate sweet potato. Keep it aside
  • Heat milk in a vessel and bring to boil
  • Add grated sweet potato and mix well
  • Add saffron and mix well. Cook until milk reduces to half
  • Add sugar and mix well
  • Add cardamom and rose water. Mix well
  • Heat ghee in a pan and fry cashews until golden brown
  • Add nuts to kheer and mix. Serve kheer warm or cold
