Paalak pakode ki kadhi and Rice with pickle

Ingredients

Serves : 1
  • 1 cups for the palak pakodas :blanched and finely chopped spinach


  • 1 cups besan


  • 1/2 tsp garam masala


  • 1 pinch hing


  • 1/2 tsp chilli powder


  • 1/2 tsp cumin seeds


  • 1 pinch baking soda


  • 1 tsp oil


  • 1 tsp salt to taste


  • 1 nos appe pan


  • 1 cups for the kadhi: sour curd


  • 2 tbsp besan


  • 1 tsp ghee


  • 1 tsp cumin seeds


  • 1/2 tsp mustard seeds


  • 1 pinch asafoetida


  • 5 nos curry leaves


  • 1 tsp coriander powder


  • 1/4 tsp turmeric powder (haldi)


  • 1 tsp green chilli paste


  • 1/4 tsp garam masala


  • 1 tsp salt or to taste


  • 1 tbsp coriander leaves chopped for garnish

Directions

  • For the palak pakodas: Combine all the ingredients in a deep bowl and knead into a soft dough without using any water.
  • Divide the dough into 8 equal portions and shape each portion into a round ball.
  • Heat and grease the appe pan with one drop of oil in each cavity.
  • Arrange the pakodas in appe pan on medium flame for 7 to 8 minutes, keep turning from time to time . Keep aside.
  • For the kadhi: Combine the curd, besan and 1 cup of water in a deep bowl, mix well with a churner and keep aside.
  • Heat the ghee in a deep non-stick pan and add the cumin seeds, mustard seeds .
  • When the seeds crackle, add the asafoetida, curry leaves, sauté on a medium flame for 10 seconds .
  • Add the curd besan mixture, coriander powder, turmeric powder, green chilli paste, and salt, mix well and cook on a medium flame for 4 minutes, while stirring continuously .
  • For serving :Add the palak pakodas to the hot kadhi and mix well and cook on a medium flame for 1 to 2 minutes.
  • Sprinkle 1/4 teaspoon garam masala
  • Drizzle some melted ghee and garnish with coriander leaves
  • Serve with hot rice. Its a complete meal, vegetables not required. Serve immediately.
