Pearl Millet Soup /Bajra ni raab


Pearl Millet Soup /Baajra ni raab It is a very healthy, different and delicious variant of soup.  It is full of flavours and is made throughout the winters for its health benefits.  RAAB is a traditional warm soup famous in Rajasthan and Gujarat and is made from pearl millet flour.  Its full of energy and strengthens our immune system.

Serves 2

  • Bajra Aata/Pearl Millet flour 2 tbsp

  • Chaach/Buttermilk 2 cups

  • carrot chopped finely 1 nos

  • green peas 1/4 cups

  • salt or to taste 1/2 tsp

  • black pepper powder 1/4 tsp

  • cinnamon powder 1 pinch

  • clove/laung 1 nos

  • For tempering- it's an essential part :Ghee 1 tsp

  • Asafoetida 1 pinch

  • Cumin seeds / Jeera 2 tsp

    Mix bajra flour with 2 tablespoons of water and make a slurry.

    Take chaach in a pan and add the bajra flour slurry to it.

    Now boil it on high flame stirring continuously.

    Once boiled, lower the flame and add all the vegetables and clove.

    Add salt, pepper and cinnamon powder and stir, let it simmer for about 5-7 minutes or till the veggies are little soft /tender

    Do not over cook, the veggies should be little crunchy.

    Meanwhile prepare the tadka.

    Heat ghee in tadka pan and add hing and jeera.

    Once they splutter, switch off the gas and pour this tempering over the Raab.

    Garnish with coriander and serve hot.
