Ingredients
Serves 4
70g Maggi Pazzta packet
1 cup or more Enchiladas sauce
4-5 flour tortillas
3/4 cup cooked black beans
3/4 teaspoon salt or as per taste
1/2 teaspoon pepper
2 tbsp olive oil
1/4 cup onion finely chopped
4-5 green chillies finely chopped
1.5 cups grated mozzarella or Cheddar cheese
2 tbsp cilantro to garnish
Directions
Preheat oven to 180 and grease rectangular or square dish
Heat oil in a pan add onions and saute until tender
Add green chillies and saute for few seconds
Add cooked beans, salt and pepper. Mix well. Saute for 2 minutes. Switch off and keep it aside
Cook Maggi Pazzta as per package instructions and keep it aside
For homemade Enchiladas sauce, please refer to my earlier recipe
Place tortillas on plate and spread sauce evenly on top
Add spoonful of cooked beans mixture with Pazzta in centre
Now add 1 tbsp grated cheese on top of the mixture
Roll tortillas tightly and place them on greased baking dish
Pour remaining sauce on top evenly
Sprinkle remaining cheese all over evenly
Bake for 14-18 minutes. Garnish with cilantro and serve warm
