Nutri Beans Veggie Soup


Nutri Beans veggie Soup-healthy and yummy Some unusual ingredients sometimes result in a wonderful outcome and here goes my innovative recipe of winter's delight.

Serves : 2
  • 4-6 nos french beans chopped

  • 1 nos carrot medium grated

  • 1/4 cups beans- lobia or roungi, boiled

  • 2 tbsp shredded cabbage

  • 1 nos green capsicum chopped

  • 1 tsp oil

  • 1 nos onion chopped

  • 2-3 nos garlic cloves chopped

  • 1 inch ginger grated

  • 1 tsp dark soy sauce

  • 2 tsp green chilli sauce or as per the taste

  • 5 cups vegetable stock (boil veggies like carrot, cauliflower, cabbage, potato, onion, tomato. grind and sieve .the liquid is the veg stock)

  • 1/2 tsp salt or to taste

  • 1/2 tsp sugar

  • 1/4 tsp pepper powder

  • 2 tsp cornflour

  • 2 tsp white vinegar

  • 1 nos spring onion greens finely chopped

  • 1 tsp melted butter or cream

  • 15 nos nutrela mini chunks soaked in warm water for 20 minutes.


  • Heat oil in a deep pan, Add onion, garlic,and ginger and sauté for a minute.
  • Add French beans, carrot, lobia bean, cabbage and mix.
  • Add dark soy sauce, green chilli sauce and vegetable stock.
  • Mix and add green capsicum,nutrela, salt, sugar and mix.
  • Add pepper powder and mix. Add cornflour mixed in a little water and cook till the soup thickens slightly.
  • Add vinegar and stir. Pour into individual soup bowls.
  • Garnish with spring onion greens,
  • drizzle a little butter or cream and serve piping hot with garlic bread or soup sticks.
