In mixing bowl take maida,salt and oil and mix well so that oil coat maida properly and its look like bread crumbs.Take out 1/4 portion of maida in separate bowl
Add palak puree in the bigger bowl and make a stiff dough and in second bowl add beetroot puree and make a dough.
Now take a lemon size portion of green dough and roll it in a circle put the stuffing in center and make like potali as in pic. like this make all the potali
now with red dough make a strip and fold it around the neck of potali and assemble it with help of clove now potali is ready for deep frying .
fry it in low flame till golden and its ready to serve.
